Greek Quinoa Salad

Flavorful and protein-packed quinoa salad!

INGREDIENTS

INSTRUCTIONS

  1. Combine the quinoa and water in a pot and bring to a boil
  2. Cover the quinoa and let simmer until all the water is absorbed
  3. Let the quinoa cool down
  4. Add the tomatoes, bell peppers, and parsley to the quinoa and mix it up
  5. Make the dressing by combining apple cider vinegar, lemon juice, olive oil, salt, and pepper
  6. Mix in the dressing
  7. Top with feta cheese crumbles and a dollop of hummus
