Quinoa Mealprep Salad
Don’t miss out on mealprepping breakfast! This is an easy and delicious breakfast to meal prep.
Best For: No preference
- Heat cooking oil on a pan over medium heat
- Saute shallot for 2 minutes
- Add zucchini and cook for 3-5 minutes
- While cooking, whisk eggs
- Add cream, parsley, salt, and pepper to eggs and whisk
- Add eggs to zucchini and sprinkle with cheese and cook until almost set
- Turn on broiler
- Broil for about 5 minutes, until golden brown on top
- Cut into slices and add to your Bebox!
