Beef Patties with Tomato Chickpea Rice and Broccoli

INGREDIENTS

  1. Start by cooking the rice according to the package instructions
  2. While the rice is cooking, combine the beef, onions, parsley, and all seasonings into a large bowl and mix with a spatula or your hands
  3. Form small patties with the mixture
  4. Spray a pan with cooking spray and put over high heat
  5. Cook the patties for 4 minutes on each side
  6. Finish cooking the rice by transferring it into a pan and heating with the cooking oil or butter over medium-low heat for 3 minutes
  7. Add the tomatoes and chickpeas to the rice and cook for another 3-4 minutes
  8. Steam the broccoli by boiling 1/4 cup of water in a pot and add in the broccoli. Cover and cook for 5 minutes
  9. Portion out the rice, beef patties, and broccoli into your Bebox
