Chicken and Veggie Cauliflower “Rice” Bowl

INGREDIENTS

  1. Heat 2 tbsp cooking oil in a pan over medium-high heat and
  2. Season the chicken breasts with salt and pepper and add to the pan. Cook each side for 3-4 minutes. Inside should be white
  3. Cut the chicken breasts into cubes
  4. Heat a large pan with 3 tbsp cooking oil over medium-high heat
  5. Add the mushrooms, onions, bell pepper, and garlic to the pan and cook for 3 minutes
  6. Add zucchini, cauliflower rice, and spinach to the pan and cook for another 2 minutes
  7. Season with salt and pepper
  8. Portion the veggies into your Bebox with chicken on top
  9. Drizzle Sriracha on top and enjoy!
