Chimichurri Halibut with Smashed Potatoes

  1. Heat oven to 425
  2. Place halibut in the center of a parchment-lined baking sheet
  3. Surround halibut with fingerling potatoes on baking sheet
  4. Drizzle everything with olive oil and season with salt and pepper
  5. Cook in oven for 20 minutes
  6. While halibut is cooking, assemble chimichurri sauce
  7. Puree all chimichurri ingredients in a food processor until a pasty sauce forms
  8. When the halibut is done remove from the baking sheet and let cool
  9. Smash the potatoes with a meat tenderizer or back of a spoon on the baking sheet
  10. Drizzle with more olive oil and season with salt
  11. Return potatoes to oven to crisp for 10 minutes
  12. Remove and let cool
  13. Portion the halibut + chimichurri, potatoes, and grape tomatoes in the Bebox
