Greek Quinoa Salad

Flavorful and protein-packed quinoa salad!

INGREDIENTS

INSTRUCTIONS

  1. Cook the quinoa (follow instructions on package) and let it cool down
  2. Add the chopped tomatoes, bell peppers, and parsley to the quinoa and mix it up
  3. Make the dressing by combining apple cider vinegar, lemon juice, olive oil, salt, and pepper
  4. Mix in the dressing
  5. Top with feta cheese crumbles and a dollop of hummus
