Lemon Rosemary Chicken with Rice and Zucchini

  1. Preheat the oven to 425 degrees
  2. Cook the brown rice according to the instructions on the packaging
  3. While the rice is cooking, prepare the chicken
  4. Lay the chicken breasts on a baking sheet
  5. Pour the chicken broth atop the chicken breasts
  6. Squeeze lemon juice of 1 lemon on the chicken
  7. lay a rosemary sprig on each chicken breast and season with salt and pepper
  8. Cover the baking sheet with tinfoil and cook in the oven for 35 minutes
  9. While the chicken is in the oven, heat a pan on medium high heat and add cooking oil
  10. When the oil is hot add sliced zucchini to the pan
  11. Season zucchini with salt and pepper
  12. cook zucchini for 5-10 minutes, stirring occasionally
  13. When everything is done, let cool and portion into your Bebox
  14. Squeeze the second lemon over the cooked food
