Turkey and Quinoa Stuffed Peppers

Love stuffed peppers but hate all the calories? Try this version of healthy stuffed peppers. Delicious!

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 400 degrees F
  2. Saute onions and garlic in a large pan over medium-high heat until fragrant
  3. Add ground turkey to the pan
  4. Add cumin, black pepper, salt, and garlic powder to the mix
  5. Once turkey browns add the uncooked quinoa, tomato sauce, 1 cup of chicken broth, and cilantro
  6. Stir well and then let simmer for 15 minutes
  7. Cut bell peppers in half and remove seeds
  8. Lay bell pepper halves on a baking dish
  9. Stuff as much turkey filling into each bell pepper as possible
  10. Pour remaining chicken broth in baking dish
  11. Let bake for 25 minutes
