Healthy, vegetarian thai noodles that are easy to make and delicious to eat! Tons of flavor, without all the crap. Great meal to have prepped for your week as well.

- Cook noodles according to package directions; drain
- Meanwhile, in a large saucepan combine the next five ingredients (through garlic). Bring to boiling over medium. Stir in frozen vegetables. Cook 5 minutes or until crisp-tender.
- Add cooked noodles and bean sprouts; toss to coat. Cook 2 minutes or until heated through.
- To serve, top noodle mixture with green onions, cilantro, and peanuts. Serve with lime wedges.
