- Preheat oven to 375 F
- Lightly spray muffin tray with coconut oil (or olive oil)
- Fill each muffin cup halfway with egg whites
- Add the chopped spinach, onion, mushroom, and bell pepper to each cup until almost full
- Bake for 20 minutes
