Veggie Egg Puffs

Here is an healthy, easy, and quick breakfast recipe. This is great for mealprepping your breakfast all week!

  1. Preheat oven to 375 F
  2. Lightly spray muffin tray with coconut oil (or olive oil)
  3. Fill each muffin cup halfway with egg whites
  4. Add the chopped spinach, onion, mushroom, and bell pepper to each cup until almost full
  5. Bake for 20 minutes
  6. top egg cups with salsa
