  1. Heat oven to 425
  2. Arrange carrots and radishes on a parchment lined baking sheet and drizzle with olive oil
  3. Sprinkle with za'atar or seasoning of choice
  4. Bake for 20 minutes
  5. Meanwhile, toss the shredded kale with 3 tbsp olive oil and 3/4 lemon juice
  6. Add cooked quinoa to kale and toss
  7. Once vegetables are done, remove from oven and cool
  8. Once cool, toss the vegetables with the rest of the lemon juice and olive oil
  9. Portion kale and quinoa mixture, roasted vegetables, and pistachios into your Bebox
